This very delicious dish was served on Chinese New Year’s Eve. It can be made easily when the following ingredients are available and tastes better when served the next day:
1 – 2 kg lamb, beef, pork, chicken, cubed about 5 x 3 cm
2 small segments of a star anis, pounded
2 medium size onions, blend with
5 cloves garlic
1 bay leaf
1 lemon grass bulb, crushed with the back of a knife or the pestle
AND
2 level Tsp (tablespoon) Nenek’s Rendang,
Method
Moderately heat 2 Tsp peanut or sunflower oil
Fry
onion and garlic in it
Add
Nenek’s Rendang
Stir in meat
Add
1.5 cup water
Add star anise, bay leaf and lemon grass
bring to boil
and at once lower heat and allow to simmer
until the sauce is thick
Add salt to taste
Remove star anise, bay leaf and lemon grass before serving.
